    *Splenda, 60 tsp (remove) = 1 1/4 cup
    Baking Soda, 2 tsp (remove)
    Cinnamon, ground, 1 tsp (remove)
    Cinnamon, ground, 1 tsp (remove)
    Salt, .5 tsp (remove)
    Carrots, raw, 1.5 cup, grated (remove)
    Apples, fresh, 1.5 cup, quartered or chopped (remove)
    Coconut, sweetened, .75 cup (remove)
    Dates, .5 cup, pitted, chopped (remove)
    Walnuts, .5 cup, chopped (remove)
    Egg, fresh, 3 large (remove)
    Applesauce, unsweetened, .5 cup (remove)
    Vanilla Extract, 1 tsp (remove)


I got this recipe from another site that called for regular sugar and oil. I substitutes Splenda and applesauce.



Preheat oven to 375 degrees F (190 degrees C). Lightly oil 18 muffin cups, or coat with nonstick cooking spray.
In a large mixing bowl, combine flour, sugar, baking soda, cinnamon and salt.
In a second bowl, combine carrots, apples, coconut, dates and pecans. Stir in eggs, oil and vanilla. Add this mixture to the dry ingredients; stir until smooth.
Spoon or scoop the batter into the prepared muffin pans. Bake at 375 degrees F (190 degrees C) for 18 to 20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
