    4 Chicken Breast
    1 Can Diced Tomatoes (italian style w peppers for some kick if you prefer)
    1 can Crushed tomatos
    2 tsp Oregano
    2 tsp Basil
    1 tsp Thyme
    1 yellow onion diced
    4 cloves garlic, crushed
    2 cups cubed Zucchini
    2 Cups cubed Eggplant


Add All ingredients to Large Crockpot with Chicken on the Bottom followed by diced onion, crushed Garlic, cubed Vegetables and seasoning. Season with salt and pepper to taste. Top with Canned tomato products. Cook on High for 4-6 hours or low for 6-8 hours. Serve 1 breast per serving and divide sauce and vegetable into 4 parts. Serve Sauce and Vegetables over Whole Wheat pasta of your choice but don't forget to count that seperately. It is not included in this recipe calculations.

For great Variations add Bell or Pepercini peppers.
For Vegetarians, Skip the Chicken and add Garbonzo or Canellini Beans for a tasty twist. (or just add more veggies.
