Introduction

These muffins are vegan, moist and tasty. They are your workhorse banana muffins. Nothing fancy here but good flavor. These muffins are vegan, moist and tasty. They are your workhorse banana muffins. Nothing fancy here but good flavor.

Ingredients

    4-6 overripe bananas
    1 cup unsweetened applesauce
    1/2 cup packed brown sugar
    1/4 cup coconut oil
    2 tbsp molasses
    2 cups whole wheat flour
    1 tsp baking soda
    1 tsp ground cinnamon
    1 tsp salt
    1/2 tsp nutmeg
    pinch of cloves

Directions

Mix the first five ingredients. Sift all the dry ingredients together and fold into the banana mixture. Spoon equal amounts into a standard size muffin tin. The batter should be fairly thick. Bake for 30 minutes or until a toothpick inserted into a muffin comes out clean. Let them cool in the pan for a few minutes then remove to a wire rack for cooling.
