Ingredients

    2-cans of stewed tomatoes (pureed in blender)
    1- can of fire roasted diced tomatoes
    1-can of black beans, drained and washed with hot water
    1-can of red kidney beans, drained and washed with hot water.
    1-med onion, diced
    1-packet of taco seasoning mix
    2-cups of brown rice uncooked
    1-tablespoon of minced garlic
    1 tablespoon of chili powder

    Salt and Pepper as needed

Tips

This soup is amazing topped with plain greek yogurt and paired with tortilla chips. Dangerously delish!


Directions

Mix everything in the crockpot and cook on high for 6-8 hours.
