Ingredients

Sauce:
1 C. Ketchup
2 Tbs. granulated sugar
2 tspn. chili powder
2 tspn. Worcestershire sauce
.5 tspn. Tobasco
Remaining Ingredients:
2 Tbs. oil (canola used to calculate recipe)
1 med. bell pepper, cut into chunks
4 oz. fresh pea pods
12 oz. fresh shrimp (frozen can be used as well)
1.5 Cups fresh pineapple chunks (canned can be substituted)
.25 C. sliced green onions
Tips
Original recipe's sauce was half of what mine is here; there was never enough sauce to go around. If using cooked, frozen shrimp - thaw and toss in just to heat with the sauce, pineapple and vegetables - you do not want to overcook them.
Directions
In a small bowl combine all sauce ingredients; mix well and set aside. In a large skillet or wok, heat 1 tablespoon of oil. Stir fry bell pepper 1-2 minutes. Add pea pods; stir fry an additional 1-2 minutes. Remove peppers and pea pods from pan. Heat remaining 1 tablespoon of oil; add shrimp. Stir fry 2-3 minutes or until shrimp turns pink (if using frozen shrimp, thaw first). Stir in sauce, pineapple, green onions and vegetables. Cook until thoroughly heated. Service over rice or noodles.
