Ingredients

    1 cup Vital wheat gluten
    2/3 oz Trader Joe's Sun Dried Tomatoes in Olive Oil, chopped fine
    1 tsp Trader Joe's Crushed Garlic
    1/2 tsp Cumin
    1/2 tsp crushed fennel seed
    1/2 tsp Dill weed
    1/2 tsp Parsley, dried
    1/2 tsp Oregano, ground
    1 cup water

    BROTH
    3 cups water
    1/2 tsp Molasses
    1/2 tsp Soy Sauce

Tips

Seitan will expand a lot while boiling. Use a large pot, and "punch down" with a spoon occasionally.


Directions

Combine ingredients for broth and set on heat to boil. Mix the remaining ingredients together in a bowl. Dough should be very springy and elastic. Knead dough for a minute to make dough even more tough and elastic. Cut into 2x2" pieces and place into boiling broth. Simmer for one hour; seitan will eventually absorb all of the broth.

Serving Size: 6 servings, about 2 2x2" pieces each
