    14-16 ounces cod fillet (or other white fish such as pollock)
    2 cloves garlic
    1/2 cup chopped onion
    2 tbs. olive or coconut oil
    2 tbs. coconut milk
    1 tsp. cilantro paste


I did not cover the fish while cooking, but it might be necessary with a fillet that is 3/4 inch thick or more.


Sauce garlic and onion in oil for 2-3 minutes until starting to turn clear. Add fish and saute over medium heat for 3-4 minutes on both sides. Turn skin side down. Mix coconut milk and cilantro paste and spread on top of fish. Continue to cook over low heat for 3-4 minutes or until fish begins to flake. Remove from heat and let stand for 1 minute.

Serving Size: Makes 3 5-ounce servings
