Ingredients

10 oz.- frozen chopped spinach -thawed and squeezed dry
1/2 C.- mushrooms- finely chopped
1 C. - low fat shredded cheddar
3 oz.- canadian bacon- finely chopped
3 oz.- frozen artichoke hearts-thawed and chopped finely
1 1/4 C. - egg substitute
Directions
1. Lightly saute the mushroom.
2. Add all chopped ingredients to a bowl, when mushrooms cool slightly, add them. Mix well.
3. Add egg substitute and mix again.
4. Divide between 8 muffin cups.
5. Bake for approximately 30 minutes at 350, until a knife inserted in the middle cmes out clean.
