Ingredients

    3/4 cup dry quinoa
    1 1/2 cups chicken broth
    1 cup salsa
    1/3 cup shredded cheddar cheese

Tips

* Vegetarian

* Convert to vegan: sub chicken broth for vegetable broth, and soy cheese for Cheddar (or omit from the recipe entirely - it's still delicious!)


Directions

Combine quinoa, chicken broth, and salsa in a rice cooker and cook the same as rice. The quinoa is done once all the liquid is absorbed. Take the quinoa off the heat and stir in the cheddar cheese until it is fully melted.

Serve hot with fajitas, burritos, enchiladas, or any Mexican food you like!
