Ingredients

    6 medium Carrots (about 257g), diced small
    4 large Celery Stalks (about 120g), diced small
    3 medium Onions (about 370g), diced small
    6 cloved Garlic, minced
    4 T Olive Oil
    28oz can Petite Diced Tomatoes
    2 T Chili Powder
    1 T Cumin, ground
    1/2 T Oregano, dried
    1 t White Pepper, ground
    2 Bay Leaves
    9 cups Water
    1 T Kosher Salt
    1 T Sriracha
    2 T Vegetable Base
    1 bunch Green Onions, sliced
    8 oz Stellina Pasta

Directions

1. Saute carrots, onions, and celery in olive oil until soft.
2. Mix in chili powder, cumin, pepper, and oregano vigorously, for about a minute.
3. Add 2 cups of the water to prevent scorching, and then add tomatoes.
4. Add 2 bay leaves, vegetable base, and remaining water.
5. Add lentils and simmer until soft, about 25 minutes.
6. Add pasta and simmer until soft, about 7 minutes.
7. Add sriracha and salt to taste.
8. Mix in green onions.
