Introduction

Ingredients

    8 four ounce haddock fillets (thawed if frozen)
    2 cups fresh cilantro, chopped (1/4 cup per fillet)
    4 tbsp dry dill weed (1/2 tbsp per fillet)
    4 tbsp garlic powder (1/2 tbsp per fillet)
    16 dashes of salt (2 per fillet)
    16 dashes of black pepper (2 per fillet)
    1/4 cup lemon juice
    2 tbsp olive oil

Tips

Serve with something like roasted herb potato wedges and steamed veggies for a complete meal.


Directions

Preheat oven to 375F. Drizzle two tablespoons e.v.o.o. and 1/4 cup lemon juice and spread around in a 2" deep 11" by 9" baking pan. Place fillets in to fit. On top of each fillet, place 1/4 cup chopped fresh cilantro, 1/2 tbsp dry dill weed, 1/2 tbsp garlic powder, 2 dashes of salt, and two dashes of black pepper. Cover with aluminum foil. Bake for about 35 minutes.
