Ingredients

    1 1/2 svgs of Trader Joe's Sweet Potato Tots
    1 steamed red potato
    1 slice of corned beef
    1/4 cup of chopped green onions
    1/4 cup of eggbeaters
    Pepper to taste
    Olive oil or spray oil

Tips

Check pancakes to make sure they don't burn.


Directions

Microwave tots in a bowl for 45 secs.
Mash up
Chop corned beef into small pieces and mix into tots along with green onions and eggbeaters
Chop potato into small pieces and also blend in mix.
Add pepper to your liking.
add oil to pan and drop 2 tbls size balls into pan and flatten.
Cook on medium low for about 5 minutes each side.
Makes 2 svgs
