Ingredients

    Preheat oven to 400 degrees
    One hour before you begin the recipe, put cup of milk
    over the cup of oats , and a a TBSP of boiing water over the raisins and let both sit for 1 HOUR
    in Large bowl put the flour, flaxseed meal, baking soda, baking powder and salt....mix very well with a whisk and set aside

    Peel 4 small apples and dice into small pieces, add some of the cinnamon and brown sugar to the apples, bake in microwave for 6 minutes take out and smash apples with a fine fork,e set aside
    In another bowl add aplesauce, egg,brown sugar, and cocunut oil and mix well....Set aside.Once the raisins and oatmeal have soaked for an hour, begin making the muffin mix
    Add add apple mix, raisins, and oatmeal into the applesauce mixture, mix very well.
    gingerly add the flour mixture only until all is wet
    Put in 16 oiled muffin pans....I use canola oil spray
    Bake in oven for 25-30 minutes, test with a tooth pick, take out of oven and take muffins out of the pan while still warm.

Tips

Can substitute any other oil for coconut oil

PREHEAT OVEN TO 400 DEGREES
PUT MIXTURE INTO MUFFIN PAN AND BAKE FOR 25-30 MINUTES test with toothpick, take out when ready, and take out of muffin pan when still warm
