Ingredients

1kg ripe tomatoes
1 400g can of corn kernels
1 medium onion
3 cloves of garlic
1 tbsp olive oil
sweet thai chili sauce (or chopped fresh chili)
Salt and pepper to taste
fresh spinach chopped (optional)
light natural yogurt (optional)
chopped green onions (optional)
grated cheese (optional)
Tips
- if using fresh chili, add with garlic
- serve with dollop of natural yogurt and green onions
- can also be served with grated cheese and sour cream with natural corn chips on the side.
Directions
Chop and deseed tomatoes - set aside.
Chop onions and cook gently in olive oil until soft.
Add crushed garlic cloves and cook for a minute with the onions.
Add chopped tomatoes and simmer for around 15 minutes stirring occasionally.
Add thai chili sauce and season with salt and pepper.
Simmer for a short time for a fresher tasting soup - keep simmering longer for a richer taste.
