Ingredients

    1 Tbsp cornstarch
    1/2 medium red pepper, sliced
    1/2 medium yellow pepper, sliced
    1/4 cup water
    12 cups Napa cabbage, sliced
    2 cups broccoli florets
    1 carrot thinly sliced
    1/4 cup vegetable broth
    1/2 tablespoons peanut oil
    1/8 cup low-sodium soy sauce
    1/2 medium red onion, sliced
    1/4 cup roasted raw cashews
    1-inch knob ginger, sliced
    1/2 tablespoon sesame oil
    2 cloves garlic, minced
    135 grams Gardein Mock chicken pieces

Directions

In a small bowl, combine the cornstarch and water; Set aside

Add peanut oil and stir fry onion and ginger. Cook for one minute. Add garlic and heat through. Add broccoli, peppers, and carrots and heat until lightly cooked 3-5 minutes

When the vegetables begin to soften, add the broth and soy sauce. Stir to coat. Drizzle the cornstarch mixture over the vegetables and cook until the liquid begins to thicken. Turn off the heat and toss in the cashews.

Slice the Gardein chicken pieces and add to the pan. Cook through. Drizzle sesame oil over the stir-fry.

Serve over noodles or rice.
