Ingredients

    2 c. Potatoes O'Brien, frozen
    1 lb. Jimmy Dean Reduced fat sausage
    1 onion, chopped
    1 c. cheddar cheese, shredded
    1 c. mozzarella cheese, shredded
    16 eggs, beaten
    2 Tbsp. olive oil and 2 Tbsp. canola oil mixed together
    1 Tbsp. garlic powder


Tips

Very good with additional herbs like parsley, basil, or a little tarragon. Can substitute eggbeaters and eggbeaters whites (together) if needed.


Directions

Preheat oven to 375 degrees F. Lightly grease a 13 x 9 inch pan.
Brown the sausage in a frying pan with medium heat. Drain the oil. Set the sausage on newspapers covered with paper towels.
Pour about half of the oil mixture into a frying pan. Brown the frozen potatoes together with the onion about 15 minutes for a golden brown on medium heat. If needed, add more oil to prevent the potatoes from sticking. Place the potato mixture evenly in the prepared pan. Sprinkle with garlic powder. Cover with the cooked and drained sausage. Add about 1/2 of the cheeses. Top with the eggs. Salt and Pepper to taste. Bake in preheated oven for 25 minutes. Add the rest of the cheese to the top. Bake an additional 15 minutes or until the eggs are fully cooked.
