Ingredients

1/2 cup chopped Green Bell Pepper
1/2 cup chopped red Bell Pepper
Garlic, 2 cloves minced
Green Tomatoes, 1 large chopped
Vidalia Onion 1/2 cup, chopped
Land O Lakes, Unsalted Butter, 2 Tbsp.
Bread Crumbs - 1/2 cup
*Summer Squash, 2 medium chopped
*Kraft 2% Shredded Cheddar Cheese, 2 cups
Pepper, black, 1 tsp.
Tips
Use a glass cover if possible. If you use foil check it often after 20 minutes.
Directions
Preheat oven to 350 degrees.
Chop squash, tomatoes, and mince Garlic.
Add Butter to large sauté pan.
Add garlic and onions until onions are translucent.
Add rest of vegetables and season with black pepper (salt will jump sodium way too high). Sauté' until vegetables are al dente'.
Coat a 9" x 13" deep casserole dish with non-stick spray.
Spread a layer of vegetables and coat with cheese. Repeat until all ingredients are used.
Sprinkle with bread crumbs.
Cover and bake for 30 minutes or until bubbling.
Serving Size: Makes 6 1-cup servings
