An easy, high protien dinner! An easy, high protien dinner!
Number of Servings: 8

Ingredients

    1 cup (dry) Quinoa, cooked according to package directions
    3 chicken breasts, cubed and cooked thoroughly
    1 can black beans, drained
    1 can corn, drained
    1 can diced tomatoes, drained
    whatever spices you like

Tips

Use seasonings to your own personal taste. I usually put about half the spice cabinet in. I will use: minced garlic, onion powder, cumin, worchester sauce, basil, parsley, rosemary, adobo seasoning, crushed red pepper, chili powder, salt & pepper. Really, just whatever my tastebuds are craving that night.


Directions

Cook quinoa according to package directions. Cube chicken and cook thoroughly, season to taste. Drain all canned items. Mix all together in large pot.
