Introduction

The bag of veggies says that 2/3 cup is a serving-but in order to make this a full meal, I found that 1.5 cups is just fine-and filling, especially with the egg and the rice. Ingredients

    2 20 ounce bags of Wegman's Just Picked frozen Hong Kong Stir fry vegetables

    3 medium onions, chopped

    2 tbsp sesame oil + 2 tbsp toasted sesame oil

    2 beaten whole eggs plus 1/2 cup liquid egg whites

    (for rice)
    1.5 cups uncooked long grain white rice
    3 cups cold water
    1/4 cup low sodium soy sauce
    2 tbsp toasted sesame oil

Directions

Prepare rice first. Follow package directions but also add the soy sauce and sesame oil.

In a wok or large skillet, heat the oil. Saute onions first. Add the vegetables and cover for about 10 minutes. Add the sauce which you've mixed up before hand. Cover for another five minutes. Add the egg. Cover for five minutes or so to allow the egg to cook. Once the egg is solidly cooked, stir the veggies again. Serve hot with 1/2 cup of the rice.
