    1 dozen eggs (or egg beaters to lower calories)
    2/3 cup 95% lean ham cubed
    1 small can mushrooms
    1 cup grated cheddar cheese
    8 oz. fat free sour cream
    Parsley to taste or up to a cup
    Salt to taste or up to a tbsp


Prepare day before, for easy in oven baking before party.
Double or triple recipe for 16-24 people.


Scramble eggs with chopped parsley and salt until nearly done. Fold in sour cream. In a casserole dish, layer scrambled egg mixture, half of cubed ham, half of mushrooms, another layer of egg, ham and mushrooms. Top with grated cheese. Bake at 325 degrees for 30minutes or until warm. Recipe can be made the day before and refrigerated before baking.
