Ingredients

    1/2 cup lemon juice plus zest of 1 lemon (optional)
    1 tps dried oregano
    2 tbs honey
    2 tbs olive oil
    3 cloves garlic-crushed
    salt and black pepper
    1- 3lb package of boneless, skinless chicken breast-thawed and rinsed
    1-14oz can diced tomatoes -no salt added
    24 Greek olives cut in half
    1-10oz package frozen spinach -thawed and squeezed


Tips

I like this on better with boneless skinless chicken thighs.
any veggie can be swapped out for spinach, blanched green beans, asparagus or zucchini work out well.


Directions

In a gallon size zip top bag mix lemon juice, zest, oregano, honey, oil, garlic and salt and pepper-add chicken and allow to marinate at least 1 hour

Preheat oven to 350

In a 9X13 pan place chicken and marinade, add tomatoes (plus liquid) and olives distributing evenly.
Roast chicken for 30 minutes
Add spinach and finish cooking (15 minutes or until internal temp of 170)
