    roughly chop onions garlic and saute in 10 sprays of oil. Add courgettes and aubergines and peppers sliced into large pieces. Cook for 10 minutes then add tomatoes, a few sprigs of fresh thyme, put lid on and simmer gently for 30 mins. Serve hot cold or warm.
