Ingredients

*Sesame Seeds, 4 tsp
Salt, 1/8 tsp.
Kale, 4 oz
*Jicima 3 1/4 oz
*Orange Zest 1 tsp.
California Navel Orange - 1 medium orange
Lemon juice, 4tsp
*Extra Virgin Olive Oil, 2 tsp
*Black Pepper 1/8 tsp
Salt, 1/8 tsp
Tips
This salad is best made at least 30 minutes in advance. Make extra sesame salt and store in your pantry for a garnish on salads, rice and pasta.
Directions
To make gomasio, place sesame seeds in a dry skillet and toast the seeds over medium low heat. Slow roast
without burning, until very dark brown, stirring often. Let cool and then grind in a food processor and add the salt.
Wash kale leaves and slice very thinly (julienne) and place in a bowl. Add the sliced jicama and orange zest. Rinse the orange, then peel the skin and chop the orange flesh and add to the bowl. Toss with salt, black pepper, lemon juice and extra virgin olive oil. Sprinkle with gomasio as a garnish.
