Introduction

Number of Servings: 8

Ingredients

    1 Whole raw Chicken, Skin removed
    Chopped Celery 3 stalks
    3 x Chopped and Minced Chili's
    1 Tin Chopped Canned Tomato's
    3 x Carrots grated
    1 x Onion minced
    Chicken Stock
    Red Peppers, chopped
    Lemon Juice
    Salt and Pepper
    4 large Courgettes, chopped

    I added some Jalapeņo Pepper Sauce, Italian Herbs and Dill to flavour.





Tips

Add herbs and spices as desired. I shredded the Chicken to create a good texture


Directions

Put all ingredients into big pot, bring to boil. Let simmer until chicken is tender then remove Bones. I left Bones in for more flavour. When all veggies are cooked season to taste and blend half the pot with an immersion blender. Makes it very creamy but still leaves texture.

Serving Size: Makes 8 large Soup Bowls and some for freezing
