Ingredients

1/3 cup melted coconut oil
1/4 cup sugar
1/4 cup Stevia in the Raw
1 large egg
1 1/2 cup whole wheat pastry flour
1 1/2 tsp baking powder
1/2 tsp salt
1/2 tsp vanilla
1/2 cup almond milk (unsweetened)
Topping:
1/4 cup sugar
2 tbsp melted coconut oil
1 tbsp cinnamon
Directions
Wisk together the whole wheat pastry flour, sugar, stevia, baking powder, and salt. Combine the room temperature almond milk, egg, coconut oil and vanilla. Pour the wet ingredients into the dry ingredients and mix just to combine - do NOT overmix as it will impact the texture of the muffin. Using a medium ice cream scoop, evenly distribute the batter into 10 well-greased muffin tins. Bake for 15 - 20 minutes in a 350 degree oven or until the muffins are lightly browned around the edges.
For the topping: combine the cinnamon and sugar. Melt the coconut oil. With a pastry brush, lightly brush a warm muffin with coconut oil and then roll it in the cinnamon sugar mixture. Continue until all the muffins are coated.
Serving Size: Makes 10 medium sized muffins
