Ingredients

    1 can yellow sweet corn, drained and rinsed
    1 can black beans, drained and rinsed
    1 bunch of green onions, diced
    about 1 lb boneless skinless chicken breasts
    1 avocado, peeled and diced
    12 grape or cherry tomatoes, halved

Tips

Can be put inside lettuce wraps


Directions

Cook chicken breasts according to directions and shred with a fork.

Mix all other ingredients together, add salt and pepper to taste, and refrigerate before serving.

Serving Size: Makes about 4-5 servings
