Ingredients

    2 TBS olive oil
    0.5 medium onion sliced
    4 tsp crushed garlic
    1.25 pounds lean rump roast cleaned and diced
    0.5 cups flour
    2 tsp black pepper
    1.5 TBSP salt
    5 medium potatoes peeled and diced
    12 small mushrooms sliced or diced
    1.5 cups carrots sliced an inch lond and cut in half width wise
    2 cans italian style diced tomatoes
    2 cups water

Tips

For a quicker meal, this can be cooked on the stove over medium heat or in the crock pot on high heat.


Directions

Heat 1 TBS Olive oil over medium heat. Add sliced onion. In a bowl, combine flour, salt and pepper. Coat beef in flour and add to pan once onions are tender. Add 1TBS more of olive oil as well as garlic. Cook until beef is browned on the outside, but do not cook through.
Add meat mixture and remaining ingredients in crock pot. Cook on low heat for 4+ hours
