Ingredients

    3 large eggs
    1 1/2 cups 1% milk
    1 1/2 cups flour
    1/8 tsp. salt
    2 T oil
    1 cup Bananas
    2 cups Peaches
    2 cups Strawberries

Tips

Sweeten fruit with Truvia if needed.
Sprinkle with powdered sugar to look pretty, but not necessary.


Directions

Mix:
3 large eggs
1 1/2 cups 1% milk
Add:
1 1/2 cups flour
1/8 tsp. salt
2 T oil
On medium heat , pour about 1/2 cup in frying pan and swirl around pan to cover the bottom. Cook until starting to curl on edges, turn and brown other side. Makes 8
Slice:
1 cup Bananas
2 cups Peaches
2 cups Strawberries
Fill shell with 3/4 cup fruit, 2 tablespoons Cool Whip and roll up to eat.



Serving Size: 8 servings-1 shell, 3/4 c. fruit, 2T Cool Whip
