Ingredients

    2.5 cups brown rice, cooked and cooled
    2 cups brown lentils, cooked and cooled
    2 cups shredded beet (~1 large beet)
    1/2 t salt
    1/2 t pepper
    2 t dried thyme
    .25 t anise extract (or 1 t ground fennel)
    2 t dry mustard
    6 T very finely chopped onion
    2 little hot peppers finely chopped
    1/2 t granulated garlic
    4 T peanut butter (or other nut butter)
    1 C fine bread crumbs

Tips

Should be charred, cast iron may work best.


Directions

Peel and shred the beet, using food processor or similar
put rice and lentils through the food processor
Add other ingredients, mix well.
Refrigerate at least 1/2 hr.
Shape into burgers, 1/2 C per burger
Saute in lightly oiled pan, about 12 min.
