Lower Sodium English Muffins Lower Sodium English Muffins

    1 cup milk
    3 tablespoons unsalted butter
    1 egg
    3 cups all-purpose flour
    1/2 teaspoon Diamond Crystal Kosher Salt
    2 teaspoons sugar
    1 1/2 teaspoons dry yeast


Put ingredients in the machine in the order listed.

Select the dough cycle.

When complete:
Sprinkle corn meal or flour on your work area.

Divide the dough into 8 to 10 equal pieces. Form into balls.

Cut wax or parchment paper into squares and place them on a baking sheet. Sprinkle with Corn Meal. Place dough balls onto them. Flatten to about 1/2 inch thick. Cover and let rise for 20 - 30 minutes, until not quite double.

Heat an electric griddle to 300 degreees. Transfer Dough disks onto griddle.

Cook the muffins about 5 to 7 minutes on each side.

They should be golden brown when you turn them.

Finish up in a 350 degree oven for 10 minutes or so.

Split the muffins with a fork, toast, and enjoy.
