Introduction

Ingredients

    Potatoes (3 large potatoes shredded, or 3 cups of shredded hash brown potatoes)
    1/2 cup of chopped green pepper
    1/2 cup of minced onion or chopped
    1 large egg or 2 small
    2 tbsp. of canola oil
    2 tbsp. of taco bell con quesco cheese

Tips

This can be mixed and transferred from skillet to baking dish and baked in the oven for 20 minutes on 350

if you like to add more protein you can add sausage crumbled up, bacon, or ham


Directions

In large skillet add canola oil, shredded potatoes and green pepper and onion. Cook on medium heat stirring with spatula often, til potatoes are browned to your liking, In same skillet push the potato mix to one side and fry your egg or eggs if using small. Scramble the eggs and when whites are done, fold into the potato mix and spread evenly in skillet.
Turn heat to low or simmer and then add Taco Bell Con Quesco Cheese about 2 tablespoons and spread and fold throughout the hash browns, when blended well and cheese well melted, breakfast bake is ready to serve.
