Ingredients

    *Pork, fresh, loin, top loin (roasts), boneless, separable lean only, cooked, roasted, 40 oz (remove)
    Carrots, raw, 3 cup, chopped (remove)
    *Potato, raw, 7 medium (2-1/4" to 3-1/4" dia.) (remove)
    Garlic, 6 cloves (remove)
    Basil, 2 tbsp (remove)
    Oregano, ground, 1 tbsp (remove)
    Olive Oil, 1 tbsp (remove)
    *Balsamic Vinegar, 3 tbsp (remove)
    Onions, raw, 1 small (remove)

Directions

Marinate pork for a few hours in garlic, oregano, basil, vinegar, and balsamic vinegar.

Preheat oven 350
Cut potatoes, onion, and carrots

Add pork loin in large roasting pan. Surround pork with vegetables. Drizzle remaining marinade over vegetables.

Cover pan with tin foil.
Cook at 350 for 90 minutes or 30 minutes per pound of pork.
