Introduction

Ingredients

450 grams soya mince
1large aubergine
2 onions
100mls white wine
1 vegetable ( or beef if prefered)stock cube
1tbs mixed dried herbs
1tsp cinnamon
1/2tsp mixed spice
300mls skimmed milk
1 egg
1tbsp cornflour
50g parmesan cheese
2tbs olive oil
2 garlic cloves
Tips
I tried this recipe as in addition to trying to cut down of fat I am trying to reduce hot flushes, as have been suffering really badly recently and understand soya products are meant to help. This has to be proved to me yet ! This recipe makes a very tasty much less fatty version if the traditional Greek dish which I love.
Directions
slice aubergine and place into greased baking tray,( use 1tbs oil.bake ar 180 degrees for 25 mins till soft.
Cook onions and garlic in remaining oil,add mince, tomatoes, stock cube, cinnamon herbs and mixed spice cook for 5 mins,
Blend cornflour in a little milk, add to the rest of milk.
Beat egg and add to milk and cornflour, cook untill thick stirring all the time.
Place layer of mince in ovenproof dish then alyer of aubergine... repeat with the rest then cover with sauce.
sprinkle cheese on the top and bake for 40 to 50 mins on 170 degrees oven.
