Simple and delicious any time of day.
Leave the head and tail on if you like (I do); I also sprinkled a few dills seeds on the bottom of the baking pan (I used a rectangular glass dish).

Ingredients

    1 whole Branzino - scaled and gutted
    1 whole lemon
    salt*
    pepper*
    oil spray

    *and/or other herbs and seasonings of your choice

Tips

Try not to eat the whole thing yourself.


Directions

Heat oven to 400 degrees
Spray baking pan with oil
Slice 1/2 of the lemon into thin slices, then cut the slices in half
Cut diagonal slits into the sides of the branzino
Season the fish with salt, pepper, or your choice of seasoning.
Put lemon slices into the slits, and into the cavity of the fish.
Put on the center rack of the oven and bake for about 20 minutes until fish is flaky - but still moist.
cut remaining half of lemon into wedges to serve with the fish.
Delicious!
