Ingredients

    4 ounces neufchatel or low fat cream cheese, softened
    1/2 cup low fat sour cream
    2 ounce chopped black olives
    2 ounce chopped green chilies
    1/4 cup red bell pepper, finely diced
    1/4 cup diced green onions
    3/4 cups shredded cheddar cheese
    1/2 teaspoon garlic powder
    salt and pepper to taste

Tips

Keep this filling in the frig for up to 2 weeks (may separate slightly; just give it a quick stir before serving).


Directions

In a large bowl, cream the softened cream cheese. Gently mix in the sour cream, and then the remaining ingredients by hand. Filling can be refrigerated for up to 2 weeks. Drop a dollop onto your fried egg whites, fold over, and you've got a spicy omelette. Or serve with melba toast for a good mid afternoon snack.
