Ingredients

    2 sheets of puff pastry
    8 oz of cream cheese
    2/3 granulated sugar
    Vanilla extract
    1 egg
    water

Tips

Some sugar can be put on top of the “quesitos” for a caramelized topping. Apricot counting or confectioners or powder sugar can be used for decoration.
Use a lighter version of the regular cream cheese for a healthier version.
They are great for parties as sweet appetizer or as desserts. In Puerto Rico they are usually eaten with some coffee for breakfast. Enjoy!

Directions

1. Thaw the frozen puff pastry.
2. Bring cream cheese to room temperature so it becomes soft.
3. Preheat oven at 375°C.
4. In a bowl mix (by hand or electric mixer) the cream cheese, sugar and a few drops of vanilla extract.
5. Mix egg with some water to make an egg wash.
6. Work carefully with the pastry, especially on hot humid days (so every day in P.R.). Spread and cut in 3 x 3 inches squares.
7. Put some of the cheese mixture in center of pastry (use a spoon or a baker’s icing bag). Use as much as you like as long as the pastry can be closed.
8. Put some egg wash on the pastry so it will stick together. Seal the pastry by rolling or folding.
9. Put some egg wash on top of the pastry.
10. Baked for 15- 20 minutes on a baking sheet or until they are golden brown. (READ Puff Pastry box instructions)
