Ingredients

    16 ounces cooked chicken breast
    3 stalks celery, finely diced
    2 shallots, finely diced
    2 ounces shelled pistachio nuts, roughly ground
    1/3 cup fresh dill
    8 ounces non fat Greek yogurt
    3 tbsp dijon mustard
    2 tbsp curry powder
    2 tsp cumin
    2 tsp smoked paprika
    salt and pepper to taste

Tips

* Great on a bed of greens, paired with sliced cucumbers and carrots, or in a multigrain sandwich.


Directions

Easy peasy lunch - shred 1 pound of boneless skinless chicken breast (about 3 breasts from a package) into a medium mixing bowl. Add finely diced celery, shallots, pistachios, fresh dill, curry powder, cumin, and paprika, stirring to thoroughly combine. Add Greek yogurt and dijon mustard and stir until desired consistency is met.

Serving Size: makes approximately 8 servings (3/4 cup each)
