I usually add some carrots......but I forgot this time.:-(
Can be frozen and reheated; great with a piece of crusty bread or a small salad and an apple, a la Panera Bread!

Ingredients

7 cups Smart Balance Fat Free Milk w/calcium (can use regular skim milk as well, this was just cheaper)
Shredded cheddar cheese, 3 cups (or to taste)
2-3 tbsp flour
2-3 tbsp Smart Balance Buttery Spread
1/4 cup diced onion
1 16-oz package frozen broccoli
Salt, black pepper, and garlic powder to taste...I sometimes add a pinch of red pepper flakes :-)
Directions
If desired, defrost the broccoli in the sink for 45-60 minutes before beginning soup.
Make a roux with the Smart Balance spread, onion, black pepper and flour, gradually adding and carefully whisking in the Smart Balance milk. Once you've added all the milk, add in the garlic powder (and red pepper flakes, if desired) and stir. Then add the broccoli. Warm, stirring occasionally, and when it's hot again mix in the cheddar cheese, 1-1.5 cups at a time. Allow to simmed for about 30 minutes, then serve.
Serving Size: Makes about 8 servings, about 1 cup each
