Created to use up some fresh strawberries that were getting a little old, this recipe works well with almost any berry or stone fruit...apples, peaches, blueberries, plums. It also works well with frozen fruit (thawed) or canned pineapple. Ingredients

    Bread English toasting sandwich bread (Wal-mart) 1sl 70cal, 3 serving
    Egg, fresh, whole, raw, 1 large
    Egg white, fresh, 1 large
    Milk, nonfat (skim milk), 1 cup
    Brown Sugar, 4.5 tsp packed
    Strawberries, fresh, 1.5 cup, halves
    Granulated Sugar, 1 tsp
    *Nestle Mini Chocolate Chips, 2.5 tbsp

Tips

Tastes great with a dollop of light whipped topping, or served warm with a scoop of vanilla frozen yogurt.


Directions

Slice strawberries and sprinkle with granulated sugar and set aside.
Beat egg, egg white, milk and brown sugar.
Cut bread into cubes.
Stir bread into egg mixture until all bread is moistened.
Let sit 5 minutes.
Gently stir in strawberries and chocolate chips.
Spray 8x8 glass baking dish.
Bake in 350 oven for 35 minutes.
Let cool.

    Very Good
    I also made this to use up some strawberries (and homemade sourdough bread). It was good. I turned it into 6 servings - still very large.
