Ingredients

    1/4 cup Flax Seed
    3/4 cup Oat Flour
    3/4 cup White Flour
    1/2 cup sugar
    2 tsp. baking powder
    1/2 tsp Baking Soda
    1/2 tsp Salt
    1 tsp Cinnamon
    1 Egg beaten
    1 1/2 cup finely chopped apples
    3 Tbsp vegetable oil
    1/2 cup milk
    1/2 cup chopped nuts (optional)

Directions

Blend dry ingredients together in a bowl. In a separate bowl, combine egg, oil and milk. Add dry ingredients and stir until just blended. Fold in apples and nuts. Batter will be thick. Fill well
greased muffin pan 2/3 full. Bake at 400 for 18 to 20 minutes. Makes 12 muffins.

    These sounded great. I started to get the ingredients out but found I was out of oat flour so I used spelt flour instead. They came out delicious! Will definately try these again when I refill on oat flour. My family says 'Thanks!!!". - 2/23/09
