Ingredients

    I Whole Chicken Raw. Skin removed
    2 Cans Tomatoes
    2 250gr Punnets White Mushrooms
    1 Large Red Pepper, chopped
    1 large Red Onion, chopped
    1 x Glass White Dry Wine
    2 tbsp Robertsons Italian Herbs
    Salt and Pepper to taste
    Chicken stock as needed

Tips

I use Lemon Pepper for added freshness against the rich Tomato taste


Directions

In an electric frying pan, brown Onion, Peppers, add Italian Herbs. Add chicken and brown slightly. Add canned tomatoes and Dry white wine and let simmer for 60 mins. Remove Bones from chicken, add stock and mushrooms, simmer very gently for 2 hours until sauce is rich and thick. Add Salt and pepper to taste
