    1 tbsp EVOO
    1 small yellow onion, chopped
    2 garlic cloves, crushed
    1 c low sodium vegetable broth
    32 oz. low sodium canned crushed tomatoes
    1 bay leaf
    1/4 c roughly chopped fresh basil


1. In a large pot, heat the oil over medium -high heat. Add the onion and saute until translucent about 10 minutes. Add the garlic and stir. 2. Add the broth, tomatoes, and bay leaf. Simmer, uncovered, over low heat until the sauce thickens, about 1 hour. 3. Remove and discard the bay leaf. Stir in the basil.

Serving Size: 1/2 c = 8 servings
