Introduction

I left the tortillas out of this recipe...the filling is so good you can eat it by itself...or add a whole grain tortilla and just record it to your nutrition sheet separately! Ingredients

    3# Thawed Chicken Breast, cut into strips
    2 Med. Vidalia Onion, cut into strips
    1 Red Pepper, cut into strips
    2Yellow Pepper, cut into strips
    1 Orange Pepper, cut into strips
    2 TBSP Olive Oil
    3 TSP Chili Powder
    3 TSP Ground Cumin

Tips

Also good with a can of diced tomatoes with green chilis added!


Directions

Spray a 9x13 pan with a cooking spray. Mix together your chicken, onion and peppers.

In a small bowl mix together oil and spices.

Drizzle the chicken and veggies with the oil/spice mixture.

Bake at 400 degrees for 20-25 minutes, uncovered. Make sure there is no pink in the chicken.
