Ingredients

    1/2 cup mashed ripe avacado
    1/4 cup + 2tbsp stevia granuales
    2 eggs
    2 tbsp vinegar plus enough unsweetened original almond milk to make a full cup
    1/2 tsp baking soda
    1 cup cornmeal
    1/2 cup millet flour
    1/8 cup milled flax seed
    3/8 cup oatflour
    1/2 tsp salt

Tips

You can substitute your own preference of flours for this recipe, whole wheat flour works great as does butter and traditional buttermilk.


Directions

Preheat oven to 375. Mix almond milk with vinegar & set aside. Cream avacado w sugar, add eggs, buttermilk, & baking soda. Add flours & salt. Mix until combined. Pour into greased pan/baking dish (I use a 9-in circle cake pan) and bake 30-40min until inserted toothpick comes out clean. Allow to cool appx 10min before cutting into 12 servings.
