Ingredients

    1/2 cup mashed ripe avacado
    1/4 cup + 2tbsp stevia granuales
    2 eggs
    2 tbsp vinegar plus enough unsweetened original almond milk to make a full cup
    1/2 tsp baking soda
    1 cup cornmeal
    1/2 cup millet flour
    1/8 cup milled flax seed
    3/8 cup oatflour
    1/2 tsp salt

Tips

You can substitute your own preference of flours for this recipe, whole wheat flour works great as does butter and traditional buttermilk.


Directions

Preheat oven to 375°. Mix almond milk with vinegar & set aside. Cream avacado w sugar, add eggs, buttermilk, & baking soda. Add flours & salt. Mix until combined. Pour into greased pan/baking dish (I use a 9-in circle cake pan) and bake 30-40min until inserted toothpick comes out clean. Allow to cool appx 10min before cutting into 12 servings.
