Introduction

This is a delicious gluten free dish with lots of flavor. With the peas and spinach, you are adding some great nutritional punch. My 13 year old loves it. Ingredients

    Ingredients:

    1.5 lbs Ground Turkey Breast
    2 tbsp of Extra Virgin Olive Oil
    1 tsp Sage, ground
    1/2 tsp Salt
    1/2 tsp Fennel seed
    1 tsp Thyme, dried
    1 tsp Garlic powder
    1/2 tsp black pepper
    dash of cayenne pepper
    dash of Allspice
    dash of Cloves, ground
    dash of Nutmeg, ground
    1 lbs Brown Rice Pasta (Penne)
    1 32 oz carton Gluten Free Chicken Stock
    Peas, canned, 1 can (15oz)
    2 cups Baby Spinach (raw)
    dash of Parmesan cheese

Tips

My husband and I sometimes add crushed red pepper flakes for some extra spice. Also, I add more olive oil if I feel my turkey is getting too dry during the browning process.


Directions

Heat olive oil in large pan and start browning ground turkey, adding in next ten ingredients (spices) while browning. While turkey is cooking, start the pasta as directed on package. Once turkey is browned, add peas by gently folding into turkey. Next, add all of the chicken stock and bring to a boil and lower to simmer. Add fresh spinach and continue cooking until spinach is wilted. Serve pasta in bowls topped with turkey mixture and sprinkle with parmesan cheese.

Serving Size: makes 6-8 servings
