Ingredients

Old Fashioned Quaker Oatmeal- Plain - 1/2 cup dry
Corn meal (whole grain (bobs red mill)) 1 cup
    *Green chilly / Mirchi, 1
    *Chana Dal, 1 tsp
    *Urad Dal, 1 tsp
    Mustard seed, yellow, 1 tsp
    Ginger Root, 1 tsp
    *Canola Oil, 1 tbsp
    Carrots, raw, 1/2 cup grated
    Salt, 1 tsp
    Homemade Yogurt 1 cup
ENO fruit salt/baking soda 1/2 tsp

Directions

Heat oil in a pan and add the tempering ingredients and once the mustard seeds splutter add in corn meal and fry for a minute. Turn off heat and let it cool. In another pan dry roast, oats, cool and grind into coarse powder. Add yogurt to the corn meal and soak for an hour. Add oats powder and eno fruit salt/baking soda and pour into idli molds. Steam idlies for 10 to 15 minutes and turn off the heat.

I have a bigger size coarse corn meal, if you have fine corn meal then you don't need to soak. You can make instant idlies. Serve with tomato chutney.

Serving Size: Makes 5 servings of 3 idlies per serving
