All but the flax, chocolate chips and flour go straight into the blender. You can hide more vegetables in these easily; this recipe is for my veggie-hating nephews. Ingredients

    Zucchini, 1 large
    Banana, over-ripe, 1 large
    Canola Oil, .25 cup
    Milk, 1%, 1.25 cup
    Egg, fresh, whole, raw, 1 large
    Protein powder, whey protein Vanilla .25 cup
    Cinnamon, ground, 1 tbsp
    Salt, 1 dash
    Cocoa, dry powder, unsweetened, .33 cup
    Granulated Sugar, .5 cup

    Blend well, then gently fold in:

    Flax Seed Meal (ground flax), .33 cup
    Multi-grain baking mix, 3 cup
    Chocolate chips, mini semi-sweet, .33 cup

Directions

Bake at 350 for 18-22 minutes

Serving Size: makes 12 big muffins
