Ingredients

6 Tblsp apricot nectar
5 Tblsp Apricot Preserves
3 Tblsp Dijon Mustard
3 Tblsp reduced sodium soy sauce
3 tsp Curry Powder
6 boneless pork loin chops (5 oz each)
1 tsp salt
1 tsp pepper
2 Tblsp Olive Oil
1.5 cup sliced fresh apricots (abt 5 small)
Green onions sliced
Tips
Instead of Salt and Pepper I use Mrs. Dash. the original recipe says to cook the chops, then remove from pan and set aside while you cook down the sauce. I find that the chop is alot more tender and flavorful if you braise them in the sauce as described. You could increase the curry if you really like curry. And serve over rice if you like the sauce enough. I didn't use a third cup of sauce for each chop when served, just a little on top for presentation.
Directions
1. In a small bowl, whisk together the first five ingredients, set aside.
2. Sprinkle pork chops with salt and pepper. In a non stick skillet, cook chops in oil for 4-5 minutes on each side until nicely browned.
3. Add the sauce that you set aside earlier, the apricots and onions and turn chops a couple of times to coat. use tongs or spoon to spoon some apricot and sauce mixture on top of each chop, cover and let simmer. Turning every 10 minutes or so for 30 minutes or until chops are cooked and tender.
Serving Size: 6 servings (1 chop + 1/3 cup sauce)
