Ingredients

    4 small potatoes, diced
    .5 large onion, sliced
    1 tbsp olive oil
    salt and pepper, to taste

Tips

add red bell peppers for additional flavor boost without adding a lot of calories!


Directions

Dice the potatoes and slice the onions. Toss in a small bowl with olive oil. Grill in a non-stick outdoor grill pan over a medium flame until potatoes are fork tender and onions are done to taste.
