Ingredients

    12 oz package Broccoli Slaw
    3 medium green onions, sliced (white & green)
    1/4 cup butter
    1/2 cup slivered almonds
    2 Tablespoons sesame seeds
    2 pkg oriental ramen noodles (seasoning packets reserved)
    1/2 cup extra virgin olive oil
    1/4 cup cider vinegar
    2 Tblspn lite soy sauce
    1/3 cup sugar
    2 packets oriental noodle seasoning

Tips

I have used unsalted butter, rice wine vinegar and less of the seasoning packet (use about 1 1/3) and it still tastes wonderful while reducing the sodium content. Serving within an hour of mixing keeps it very crunchy. However, I have enjoyed this 2 days later for lunch and it is still quite crunchy!


Directions

Preheat oven to 350 degrees
Melt the butter in a large pan or cookie sheet with sides
Crush up noodles and add to butter with almonds and sesame seeds
Toast for 10 minutes, stirring once half way until lightly browned
Meanwhile combine Broccoli slaw and sliced green onions
In another large bowl, whisk together the olive oil, vinegar, soy sauce, sugar and seasoning packets.
Add the toasted noodle mixture to the dressing and stir to coat.
Mix the dressing and noodle mixture into the broccoli slaw, cover and chill.

Serving Size: makes 8 generous portions
